Automation increasing in pizza restaurants

Automation is becoming more prevalent in the restaurant industry as a way to cut costs and increase efficiency. This year alone, we have seen an array of new technologies that are helping to automate processes in restaurants and fast-casual chains. From self-ordering kiosks to robotic delivery drones and more, automation has been impacting foodservice for some time now.

Automating the pizza-making process could go a long way for operators, as it may be the most labor-intensive part of running a pizzeria. A May study from IBISWorld found that there are 845,650 employees of pizza restaurants in the United States in 2022, while Zippia research finds that the number of pizza makers in the country is “over 534,275.” If these figures are within the range of accurate, automating the pizza-making process can cut back on nearly two-thirds of the labor needed in pizzerias.

Some tech providers, however, are not satisfied stopping there. They have set their sights on an even greater pizza automation challenge: automating the entire restaurant, from preparation to getting the food into customer hands.

San Francisco-based Momentum Machines is one such company that is working on this challenge. The company has developed a robotic kitchen that can produce gourmet-style pizzas at a rate of up to 1,000 pies per hour.

The system features an automated assembly line that can assemble and cook pizzas without human intervention. The system will be able to handle all aspects of production, including shaping the dough and adding sauce and toppings. It will even be able to place pizzas in ovens and retrieve them when they are done cooking.
